    The eggless egg salad sounds delish! Sweet potatoes on bread? That’s something I haven’t though of before!

    Hi, thank you for the yummy recipes.
    I would however, like to see you recommend another alternative to the Canola mayo–Canola it is not welcomed by the body, there are so many better, more healthy alternatives. Canola is made from the weed, rape seed and is not a vegetable, nor can it be called a vegetable oil. This is not a healthy oil. Sunflower, Grapeseed or Olive oil mayo’s are great options.

    Thanks for these awesome recipes. I am going to try the egg-less salad first..since going vegan I have missed my eggs sometimes!

    Love the information given. But I do have a question for you. My husband needs to loose around 100 lbs by September 2010, anything could you suggest as far as diet goes.

    I love your website and have been referring many clients who are interested in green, healthy eating to both this site and your book. Thanks for the great information!
    My understanding is that canned wild alaska salmon is one of the more eco-friendly options. What is your take on the environmental impact of it?
    My fave spring sandwich: salmon salad on rye bread:
    1 6oz can salmon
    1 tbsp yogurt
    1 tsp dijon mustard
    1 tsp capers
    1/4 tsp tarragon
    Mix the above, then layer with spinach, sprouts, or another green veggie on rye bread.
